If you add more tomatoes, then there is a chance that they will release a lot of juice, then the dish may not be very tasty, liquid and even sour.

The milk should be cold, then the omelette will be airy. Pour it into a saucepan, beat the eggs, season with salt and beat with a fork until smooth.

Let's see if there is enough vegetable oil, if there is very little, add more, otherwise the dish will burn. Fill with egg mixture. Cover the pan with a lid and fry over low heat for 10-13 minutes until the center is completely firm. Cooking time depends on the diameter of the pan and what it is made of. The readiness of an omelet can be determined this way: press your finger on it in the center, if it is dense and does not spread when touched, then it is ready.

Grate the cheese on a coarse grater, sprinkle it and cover with a lid so that it melts. You can take any cheese: mozzarella, processed, suluguni.

Cut the omelette into 4 parts and serve. Be sure to serve immediately as cooked; if it cools down, it won’t be as tasty. Before serving, you can sprinkle it with fresh herbs. Bon appetit!

If you want the dish to be more fried, cut it into pieces in a frying pan before the top of the eggs has completely thickened and turn it over to the other side, then it will have a brighter fried taste, because fried always tastes better.
  8. You need to salt the egg mass before frying, while beating, otherwise the salt will not be evenly distributed.
  9. If you want to get a denser omelette, add semolina or flour to the egg mixture, about 1 tsp, then it will turn out dense, but not airy.
  10. It is not advisable to heat eggs for a long time; they lose their taste, and vegetables release a lot of juice.
  11. As for the frying pan. I always use it with a non-stick coating, especially when frying on it, my breakfast has never burned, but with cast iron there were problems, but as they say, whoever gets used to it. Simply, the non-stick frying pan heats up evenly and the egg mixture cooks quickly.
