So, let's begin. We make minced meat, that is, we grind the pork into a meat grinder. Be sure to add a little lard to the lean pieces. I don’t know about you, but I prefer to make minced meat myself. So I know exactly what it consists of, unlike store-bought ones.

Pre-soak croutons from a white loaf (two slices are enough for a given amount of minced meat) in water. After they become soft, lightly squeeze out the water and add them to the minced meat. Salt and pepper to taste. And in order for us to get juicy pork cutlets, we put sour cream in the minced meat.

Now you need to mix everything well with your hands and beat off the resulting minced meat (pick it up in your hand and throw it back into the bowl). After this procedure, it becomes homogeneous and holds its shape perfectly. The cutlets do not fall apart (even when frying in a frying pan). And you don’t need to put an egg in for fastening. I think it makes the cutlets tougher.

The minced meat is ready and you can form cutlets. Generously grease a baking dish (or baking sheet) with vegetable oil.

Good afternoon to all food lovers! Everyone in our family loves pork cutlets and no one is afraid of fat. Therefore, today I present three step-by-step recipes for minced pork cutlets.   1. I also peel my potatoes, onions and garlic. I wash the pork, dry it with a napkin and cut it into small pieces. Cut the meat depending on how it is convenient for you to grind it - in a meat grinder or in a blender.

2. I pass the meat through a meat grinder twice. Potatoes, onions and garlic for one serving. I add half a glass of water to this mixture, break one egg, salt and pepper. You can add other favorite spices. I knead the minced meat well. And I beat it a little more - I slap the lump of minced meat on the bottom of the bowl. This increases the stickiness of the minced meat so that the cutlets do not fall apart during frying.

3. I proceed directly to preparing the cutlets. When forming cutlets, I periodically wet my hands with water so that the minced meat does not stick to my hands.

4. I will use flour to coat the cutlets. You can also use breadcrumbs for this purpose. I dredge each cutlet thoroughly in flour on all sides.

5. Place the frying pan on the fire and pour in three tablespoons of vegetable oil. When it’s hot enough, I lay out the cutlets. Fry on both sides for 3-5 minutes until white juice begins to appear. And I immediately remove the cutlets from the pan.

When I need to cook a lot of cutlets quickly, I make them on a baking sheet in the oven. This significantly saves cooking time. And you don’t need to stand at the stove, and fat doesn’t splatter from the pan.

And one more important point. In the oven, the cutlets will never fall into pieces. Whatever minced meat you take and however you cook it.

How to cook:

1. Be sure to wash the meat and dry it with napkins. I peel and wash the onions and garlic. I cut about 150 grams from a white loaf. That's three slices. I cut off the crusts and fill them with milk.

2. This is a quick recipe for me, so I won’t grind the meat in a meat grinder, but grind it in a blender. I also throw in peeled onions and garlic.

3. Mix the soaked loaf with minced meat. I break an egg there, add salt and pepper. At this stage you can add any spices you like.

I consider it unnecessary to roll the cutlets in flour or breadcrumbs. After all, we cook them in the oven.

I form cutlets from the prepared minced meat and place them immediately on a baking sheet lined with foil. If desired, the foil can be greased with oil.

4. Place the baking sheet in a preheated oven at 250 degrees. oven. The dish takes about 45 minutes to prepare. During baking, I baste several times with the fat that has separated from the cutlets. Cooking method

1. Turn on the oven at 190ºС. Peel and rinse the garlic cloves and onion. We wash the pork and beef, wipe it with napkins and cut into pieces. Soak the white bread in water and leave for a quarter of an hour.

2. Pass the meat, squeezed white bread, garlic and onion through a meat grinder. Grate the cheese on a large segment of a grater.

3. Add cheese shavings and egg to the minced meat. Salt, season with pepper, mix well and beat lightly.

4. Pour flour into a plate. With wet hands, take some minced meat and form it into cutlets. Dip them in flour and place them in a greased pan.

  • 1 Let's start by preparing the minced meat. Ideal, of course, if you buy fresh pork fillet at the market and grind it yourself in a meat grinder at home. But, alas, you don’t always have time for this, so you can buy ready-made minced meat in the supermarket, just try to choose the least fatty one.
  • 2 Next, take half a loaf of bread, remove the pulp from it and soak it in milk. I advise you to make sure that the resulting slurry is homogeneous and without lumps. If there are any lumps, you can simply crush them with a fork or your hands.
  • 3 Finely chop the onion. If you want a completely homogeneous composition of the cutlets, you can cut the onion into large pieces and blend in a blender until it becomes a semi-liquid paste. But personally, I like it when there are pieces of baked onions in the cutlets.
  • 4 Now it’s time to mix the prepared ingredients. Add white bread soaked in milk, chopped onion to the bowl with minced meat, add a spoonful of sour cream and beat in an egg. Salt, pepper and add other meat spices, which are sold in bags at any grocery store.
  • 5 Mix the resulting mass as thoroughly as possible for future cutlets. And we begin to form small round balls from it. For one cutlet I use about one tablespoon with a mountain of prepared minced meat.
  • 6 To prevent the minced meat from sticking to your hands, moisten them with water from time to time. Next, roll our pieces in breadcrumbs.
  • 7 Preheat the oven to 180°. Grease a baking sheet with sunflower oil and place the cutlets on it. I love the taste of baked onions so much that I also sprinkle onions on top of the cutlets. You don't have to do this.
  • 8 Directly on the baking sheet, press our meat balls with our hands a little so that they acquire a flatter shape. Using a kitchen sprayer, spray the cutlets with vegetable oil, cover with foil and place everything in the oven.
  • 9 Now about how long to cook the cutlets in the oven. I keep them in the oven until a dark golden crust appears - from 30 to 45 minutes (the time depends on the size of your cutlets and the type of minced meat: chicken, for example, will cook faster).

  • 10 Remove the cutlets from the oven and place them on a large platter on top of the lettuce leaves while still hot.
